Emerald Vanilla Bean Ice-Cream Knickerbocker Glory with fresh Irish summer fruits and mixed berry coulis (Serves 4)
This is a fun, versatile, throwback recipe that will please everyone whether at home or in a casual dining setting like a coffee shop or hotel. The emphasis is on the quality of the ice-cream and pairing it with Irish summer fruits. It looks fantastic and is a colourful, fun and simple dish.
Ingredients:
For the coulis:
- 300g strawberries
- 200g raspberries
- Juice of ½ a lemon
- 60mls water
- 40g caster sugar
For the Knickerbocker Glory:
- 12 scoops of Emerald vanilla ice-cream
- 80g of fresh strawberries
- 50g of fresh raspberries
- 20g icing sugar
- 1 ripe mango, peeled and diced
- 120g blueberries
- 12 large scoops of Emerald Vanilla Ice-Cream
- 25g pistachios, chopped
Method:
To make the coulis place all of the ingredients into a pot and bring to simmering point over a medium heat. Simmer for 3 minutes then liquidise, strain and allow to cool until needed.
To assemble the knickerbocker glory put a generous scoop of ice cream into a sundae glass, top with a mix of the fruit and coulis. Repeat this three times until the sundae glass is filled, top the glass with a final portion of fruit, some pistachio, a drizzle of the coulis and some icing sugar.
